Avocado Salad

Heres a nice healthy lunch for all your Avocado lovers out there!!!

Ingredients

• 1 Cucumber
• 2 Avocados
• ½ Medium Red Onion
• 450g Cherry Tomatoes
• 25g Fresh Coriander
• 2 Tablespoons Virgin Olive Oil
• 1 Medium Lemon
• 1 teaspoon sea salt
• A pinch of black pepper

Method

Chop and place the following in a large salad bowl.
o Tomatoes
o Coriander
o Thinly slice the red onion.
o Slice the cucumber.
o Dice the avocado.

Cover the salad with 2 tablespoons of virgin olive oil and 2 tablespoons of lemon juice. Toss the salad together to combine. Add sea salt and black pepper for seasoning.
